New Blue Duck Bakery Manufacturing Facility, Shop Coming To Riverside

New Riverhead location expected to open within weeks.

The Blue Duck Bakery is coming to Riverside.

According to owner Nancy Kouris, she and her husband Keith Kouris — the couple have opened Blue Duck Bakery Cafe locations in and , with a new site — are in contract with Southampton Town to purchase 2 acres of land in Riverside to build a new production facility.

The goal, Kouris said, is to build a 10,000- to 15,000-square-foot facility to manufacture "our nationally recognized artisan breads and sweets."

Currently, the breads are baked out of the Southold location. "But we have grown out of that location in four short years," she said.

In addition, the Riverside facility will also feature a retail store when the Riverside hamlet center takes shape, Kouris said, with an outlet store likely until those plans solidify.

"We are quite excited about the potential here," she said.

The hope, she added, is to complete the facility within the next 12 to 18 months. "We have lots of work ahead of us, but we are extremely thankful for all the local support."

Meanwhile, the new Riverhead location of the on East Main Street "is finally taking shape," Kouris said. "We are optimistically planning on opening at the end of September or early October."

Besides offering artisan breads, cakes, cookies, pies, and other delicious goodies, the new business will also offer  soups, sandwiches, and salads, with lots of seating much like the Southampton location.

"Look for aquarium-themed cookies and cupcakes," Kouris said. And, she hinted that T-Rex cookies could be on the menu, too — is believed to be headed to East Main Street, after the former  closed in 2008.

At a Monday meeting of the Flanders, Riverside and Northampton Civic Association, some residents pondered what the new Blue Duck Bakery facility would look like.

"I'm sure it will be a beautiful building," FRNCA president Brad Bender said.
